food day

brownie batter dip
friday we had a food day at work to celebrate the conclusion of the scu, let's just say i didn't eat lunch that day.  we had an impressive spread of goodies, anything from dips to fruity pebbles rice krispie treats. 

i contributed brownie batter dip (a recipe i found on pinterest) with teddy grahams for dipping and a champagne cake from the bake shoppe in windsor heights.

here is the recipe if you're interested.

ingredients:

  • 8 oz. cream cheese
  • 1/2 c. butter
  • 2-3 c. powdered sugar (varies by desired consistency)
  • 5 tbsp. all purpose flour
  • 5 tbsp. cocoa powder
  • 2 tbsp. brown sugar
  • 3+ tbsp. milk (varies by desired consistency)
  • 1 tsp. vanilla
directions:
  1. whisk together the cream cheese and the butter with a hand or stand mixer.
  2. add 2 cups of the powdered sugar, 1 cup at a time, and 1 tbsp. milk.
  3. add the flour, cocoa powder, vanilla, brown sugar, and 1 more tbsp. of milk if needed.
  4. whisk all until smooth.
  5. add remaining powdered sugar and milk alternately until dip reaches your desired consistency.

fail

today we had food day at work and i brought cake balls. apparently i should have thought out my sprinkle color choice a little bit better.

here is what i found myself saying the majority of the day "no actually we're not expecting, i just like the color pink."

i was also told if underwriting doesn't work out i could open my own cake ball bakery. how fun would that be.

s'mores


well today was food day at work and i just love those days. it is so fun seeing what everyone else brought in and snacking on all the goodies throughout the day.  i decided to try out a new recipe today, chocolate dipped s'mores. it is definitely not camping season but these were almost as good as the real deal and super easy.

here is the recipe if you're interested:

graham crackers (one box if you want to make plenty)
semi-sweet chocolate chips (9 per square)
marshmallows (did you know they make flat marshmallows just for s'mores these days?)
almond bark (1 block)
sprinkles

preheat oven to 400 degrees. place graham crackers on sheet, one half gets chocolate, the other half marshmallow.  pop the baking sheet in the oven until marshmallows turn to your desired shade of doneness. smush together the chocolate side and marshmallow side to make a sandwich.  put in freezer five-ten minutes.  melt almond bark.  partiallly dip s'mores and cover with sprinkles.  enjoy!
